Grilled Zucchini Greek Salad

Ingredients
  

2 medium zucchinis, sliced into ½-inch rounds

1 red bell pepper, diced

1 cucumber, diced

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your grill to medium-high heat.

    Toss the sliced zucchini and red bell pepper in 1 tablespoon of olive oil, salt, and pepper.

      Grill the zucchini and red bell pepper slices for about 3-4 minutes on each side, or until grill marks appear and they are tender. Remove them from the grill and let them cool.

        In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and Kalamata olives.

          Once the grilled vegetables have cooled, chop them into bite-sized pieces and add them to the bowl with the other vegetables.

            In a small bowl, whisk together the remaining olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.

              Pour the dressing over the vegetable mixture and toss gently to combine.

                Finally, add the crumbled feta cheese and gently fold it into the salad.

                  Garnish with freshly chopped parsley before serving.
