Grilled Nectarine Burrata Prosciutto Salad

Ingredients
  

2 ripe nectarines, halved and pitted

8 oz burrata cheese

4 oz prosciutto, sliced

4 cups arugula or mixed salad greens

1/4 cup toasted pine nuts

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Prepare the Grill: Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

    Grill the Nectarines: Place the halved nectarines cut side down on the grill. Grill for about 3-4 minutes, until you get nice grill marks and the fruit is slightly softened. Remove from the grill and let cool.

      Prepare the Base: In a large salad bowl, add the arugula or mixed salad greens.

        Add Burrata and Prosciutto: Tear the burrata cheese into segments and place it on top of the greens. Then layer the grilled nectarines and prosciutto slices over the salad.

          Toast the Pine Nuts: In a small skillet over medium heat, toast the pine nuts for about 2-3 minutes, stirring frequently, until they are golden brown. Be careful not to burn them.

            Dress the Salad: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the salad.

              Finish with Pine Nuts and Basil: Sprinkle the toasted pine nuts over the top and garnish with fresh basil leaves.
