Greek Style Loaded Hummus

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

1/4 cup extra virgin olive oil, plus more for drizzling

2 tablespoons lemon juice

1 large garlic clove, minced

1/2 teaspoon ground cumin

Salt, to taste

1/4 cup water (or more for desired consistency)

1/2 cup diced cucumber

1/2 cup cherry tomatoes, halved

1/4 cup Kalamata olives, pitted and sliced

1/2 cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

1 tablespoon chopped red onion (optional)

Pita chips or fresh veggies, for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt. Blend until smooth.

    Gradually add water until the hummus reaches your desired consistency. Taste and adjust seasonings as necessary.

      Transfer the hummus to a serving platter, and use a spoon to create a well in the center.

        Drizzle extra virgin olive oil over the hummus and sprinkle the top with diced cucumber, cherry tomatoes, Kalamata olives, feta cheese, parsley, and red onion.

          Serve with pita chips or fresh veggie sticks for dipping.
