500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

4 garlic cloves, minced

2 inches fresh ginger, grated

1 tablespoon ground cumin

1 tablespoon ground coriander

1 tablespoon garam masala

1 teaspoon turmeric

1 teaspoon chili powder

Salt, to taste

3 tablespoons vegetable oil

1 large onion, finely chopped

1 can (400g) chopped tomatoes

200ml coconut milk

Fresh coriander, for garnish

Basmati rice, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine the yogurt, lemon juice, minced garlic, grated ginger, cumin, coriander, garam masala, turmeric, chili powder, and salt. Add the chicken pieces and mix well until they're fully coated. Cover and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the marinated chicken (discarding excess marinade) and cook for about 6-8 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining oil and sauté the chopped onion for 4-5 minutes until soft and translucent. Add the chopped tomatoes and let them cook for another 5-7 minutes until they break down and thicken.

        Combine Components: Return the chicken to the skillet and pour in the coconut milk. Stir gently to combine the chicken and sauce. Bring the mixture to a simmer, then reduce the heat and allow it to cook for another 10-15 minutes, letting the flavors meld together. Adjust seasoning with extra salt if needed.

          Garnish and Serve: Remove from heat and garnish with freshly chopped coriander. Serve hot with fluffy basmati rice on the side to soak up the delicious sauce.
