Garlic Butter Steak Bites and Potatoes

Ingredients
  

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Optional: A pinch of red pepper flakes for heat

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 15-20 minutes or until fork-tender. Drain and set aside.

    Sauté the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the drained potatoes, season with salt, pepper, and paprika. Cook for about 5-7 minutes, stirring occasionally, until golden brown and crispy. Once done, remove from the skillet and set aside.

      Cook the Steak Bites: In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to high and add the steak bites in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side until browned and cooked to your desired doneness. Season with salt and pepper.

        Add Garlic Butter: Once the steak bites are cooked, lower the heat to medium and push them to one side of the skillet. Add the butter and minced garlic. Allow the butter to melt, then mix it with the steak bites, allowing them to be coated in the garlic butter for an additional minute. If desired, sprinkle in red pepper flakes for some heat.

          Combine and Serve: Add the crispy potatoes back into the skillet, tossing everything gently to combine, allowing the flavors to meld for another 2 minutes. Finish with fresh parsley for garnish.
