Ingredients

For the Steak Bites:

1 lb (450g) sirloin steak, cut into 1-inch cubes

4 cloves garlic, minced

4 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

For the Potatoes:

1 lb (450g) baby potatoes, halved

2 tablespoons olive oil

1 teaspoon paprika

½ teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, salt, and pepper until well combined.

        - Spread the potatoes in a single layer on a baking sheet and roast in the oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

          Cook the Steak Bites:

            - While the potatoes are roasting, season the steak cubes generously with salt and pepper.

              - In a large skillet, heat olive oil over medium-high heat. When the oil is hot, add the steak bites in a single layer (you may need to do this in batches) and sear for 2-3 minutes on each side until a nice crust forms and the steak is cooked to your desired level of doneness. Remove the steak from the skillet and set aside.

                Make the Garlic Butter Sauce:

                  - In the same skillet, lower the heat to medium and add the butter, minced garlic, thyme, and Worcestershire sauce.

                    - Cook for about 1-2 minutes, stirring frequently, until the garlic becomes fragrant but not burnt.

                      Combine and Serve:

                        - Add the cooked steak bites back to the skillet and toss to coat them in the garlic butter sauce. Cook for an additional minute to warm through.

                          - Remove potatoes from the oven and plate them alongside the garlic butter steak bites. Garnish with fresh parsley.

                            Enjoy:

                              - Serve hot, and revel in the delicious combination of flavors while enjoying this hearty dish!
