1 pound sirloin steak, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 teaspoon dried thyme (or fresh if available)

½ teaspoon red pepper flakes (optional for some heat)

Prepare the Potatoes: Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the halved baby potatoes with olive oil, half of the minced garlic, paprika, thyme, salt, and pepper. Toss to coat evenly.

    Roast the Potatoes: Spread the coated potatoes on a baking sheet in a single layer. Roast them in the preheated oven for about 25-30 minutes, or until golden and crispy, flipping halfway through cooking.

      Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat and add 2 tablespoons of butter. Once melted and sizzling, add the bite-sized steak pieces. Season with salt, pepper, and red pepper flakes if using.
