Ingredients

2 cups fresh strawberries, hulled and halved

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: crushed nuts, granola, or shredded coconut

Instructions

Prepare the Strawberries: Begin by washing and hulling the strawberries. Slice the strawberries in half or quarters, depending on their size, to create bite-sized pieces.

Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well until the mixture is smooth and creamy. Taste and adjust sweetness if necessary.

Coat the Strawberries: Add the sliced strawberries to the yogurt mixture and gently fold them in until all pieces are well-coated.

Form the Clusters: On a parchment-lined baking sheet, use a spoon to scoop out heaping tablespoons of the yogurt-coated strawberries, leaving a little space between each cluster. You can create single clusters or combine a few strawberries together if preferred.

Add Toppings (Optional): If desired, sprinkle some crushed nuts, granola, or shredded coconut on top of each cluster for added texture and flavor.

Freeze the Clusters: Place the baking sheet in the freezer and allow the strawberry yogurt clusters to freeze for at least 2-3 hours, or until fully hardened.

Serve: Once frozen, remove the clusters from the baking sheet and store them in an airtight container in the freezer. When ready to serve, pop a few clusters out for a refreshing and nutritious treat!

Prep Time: 15 minutes | Total Time: 2-3 hours + freezing | Servings: Approximately 12 clusters
