Ingredients

For the Fiery Chicken:

2 boneless, skinless chicken thighs

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon sesame oil

1 clove garlic, minced

1-inch piece of ginger, grated

Salt and pepper, to taste

For the Ramen:

4 cups chicken broth

2 packs of instant ramen noodles (discard the seasoning packets)

1 cup baby spinach

1 medium carrot, julienned

2 green onions, sliced

1 tablespoon sesame seeds

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons plain Greek yogurt

2-3 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

1 teaspoon chili flakes (optional for extra heat)

Instructions

Marinate the Chicken: In a bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, and season with salt and pepper. Add the chicken thighs and coat them evenly. Marinate for at least 30 minutes (or up to 2 hours for stronger flavor).

Cook the Creamy Garlic Sauce: In a small mixing bowl, blend together mayonnaise, Greek yogurt, minced garlic, lemon juice, and season with salt and pepper. If you like it spicy, add chili flakes. Refrigerate until ready to use.

Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken thighs and cook for about 5-7 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F). Remove from skillet and let it rest for a few minutes before slicing.

Prepare the Ramen: In a large pot, bring the chicken broth to a boil. Add the ramen noodles and cook according to package instructions (typically 3-4 minutes). One minute before the noodles are done, add the baby spinach and julienned carrots to the pot. Remove from heat.

Assemble the Bowls: Divide the ramen and broth among serving bowls. Top with the sliced fiery chicken, and garnish with sliced green onions and sesame seeds. Drizzle a generous amount of creamy garlic sauce over the top.

Serve: Enjoy your Fiery Chicken Ramen with Crunchy Garlic Sauce hot – perfect for a cozy night in or an exciting dinner gathering!
