12 oz (340g) penne pasta

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped (packed in oil)

1 cup heavy cream

1 cup spinach, fresh

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes, until fragrant.

        Add the Cream: Pour in the heavy cream and stir to combine. Bring the mixture to a gentle simmer.

          Combine Ingredients: Add the cooked chicken back to the skillet along with the fresh spinach and Italian seasoning. Stir in the grated Parmesan cheese until melted and the sauce becomes creamy. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

            Mix with Pasta: Add the drained penne pasta to the skillet, tossing to coat the pasta evenly with the sauce. Cook for an additional minute until everything is heated through.

              Serve: Taste and adjust seasoning with more salt and pepper, if needed. Garnish with fresh basil before serving.
