1 cup cooked rice (white or brown)

1 cup canned corn, drained (or fresh corn kernels)

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon lime juice

Salt and pepper, to taste

Fresh cilantro, chopped for garnish

Optional toppings: crumbled queso fresco or feta cheese, avocado slices, and lime wedges

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the cooked, shredded chicken to the skillet and season with paprika, garlic powder, salt, and pepper. Stir well to combine and heat through for about 3-5 minutes.

      Add the drained corn to the skillet and mix everything together. Cook for an additional 2-3 minutes until the corn is warmed through.
