Ingredients

12 large jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Shells: In a large pot of salted boiling water, cook the jumbo shells according to package instructions until al dente. Drain and rinse with cold water to prevent sticking.

Prepare Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

Stuff the Shells: Carefully fill each cooked jumbo shell with about 2 tablespoons of the spinach and ricotta mixture.

Assemble the Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish. Arrange the stuffed shells on top of the sauce. Pour the remaining marinara sauce over the stuffed shells and sprinkle with extra mozzarella cheese.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve: Once baked, remove from the oven and let cool slightly. Garnish with fresh basil leaves if desired, and serve hot!
