12 ounces of pasta (penne or fusilli work great)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14 ounces) crushed tomatoes

2 cups vegetable broth

1 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another 30 seconds until fragrant.

      Add the crushed tomatoes, vegetable broth, and dried herbs (thyme, oregano). Season with salt and pepper to taste, and stir to combine.

        Bring the mixture to a boil, then add the pasta. Stir well to ensure the pasta is submerged in the liquid.

          Reduce the heat to medium-low, cover, and simmer for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

            Lower the heat, pour in the heavy cream, and mix until creamy. If desired, add Parmesan cheese at this point for extra richness.

              Stir to combine and let the pasta simmer for another 2-3 minutes until heated through.

                Serve immediately, garnished with fresh basil leaves and additional Parmesan cheese if desired.
