3 medium-sized potatoes, diced

1 bell pepper, chopped (any color)

1 small onion, diced

4 large eggs

1 cup cooked and crumbled breakfast sausage (or bacon)

1 teaspoon paprika

½ teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: shredded cheese (cheddar or jack), avocado slices, hot sauce, or salsa for serving

Cook the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and tender.

    Sauté Vegetables: Add the chopped onion and bell pepper to the skillet. Sprinkle in the paprika and garlic powder. Continue cooking for another 5-7 minutes until the vegetables are softened.

      Add Meat: Stir in the cooked breakfast sausage (or bacon) to the skillet, mixing everything together. Allow it to warm through for about 3-4 minutes.
