Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

2 tbsp soy sauce

1 tbsp fish sauce

2 tbsp brown sugar

2 cloves garlic, minced

1 tbsp fresh ginger, minced

1 tsp lime juice

1 tsp chili paste (adjust to taste)

2 tbsp vegetable oil

8-10 wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tbsp soy sauce

1 tbsp lime juice

1 tbsp brown sugar

1/2 tsp chili paste (adjust to taste)

Chopped cilantro and crushed peanuts for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the soy sauce, fish sauce, brown sugar, minced garlic, ginger, lime juice, chili paste, and vegetable oil. Mix well.

    Add the cubed chicken thighs to the marinade, ensuring every piece is well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and chili paste until smooth. Adjust the thickness with more coconut milk if desired and set aside.

        Skewer the Chicken: Preheat your grill to medium-high heat. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. Ensure it reaches an internal temperature of 165°F (75°C).

            Serve: Remove the skewers from the grill and let them rest for a minute. Drizzle with the peanut sauce and garnish with chopped cilantro and crushed peanuts. Serve warm.
