8 oz linguine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/4 cup unsalted butter

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1 tsp Italian seasoning

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving (optional)

Juice of 1 lemon

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken pieces with salt, pepper, and smoked paprika.

      Make the Cowboy Butter: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to let it burn.
