4 boneless, skinless chicken thighs

1/2 cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus extra for garnish)

1 tablespoon fresh chives, chopped

1 teaspoon smoked paprika

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

Juice of 1 lemon

1 tablespoon Worcestershire sauce

Fresh vegetables (like bell peppers and zucchini) for serving

Cooked rice, quinoa, or crusty bread for serving

Instructions
 

Prepare the Cowboy Butter: In a bowl, combine the softened butter, minced garlic, parsley, chives, smoked paprika, onion powder, cayenne pepper, salt, and black pepper. Mix until fully combined. Set aside.

    Cook the Chicken: Heat a large skillet over medium-high heat. Season the chicken thighs with salt and pepper on both sides. Add a little olive oil to the skillet, then add the chicken thighs once hot. Sear for about 6-7 minutes on each side, until they are golden brown and fully cooked (internal temperature should reach 165°F/74°C).

      Add Cowboy Butter: When the chicken is nearly done, reduce the heat to low and add half of the cowboy butter mixture to the skillet. Stir it into the skillet to create a delicious sauce, coating the chicken evenly. Let it cook for an additional 2-3 minutes.

        Finish with Lemon and Worcestershire Sauce: Squeeze the juice of one lemon over the chicken and add Worcestershire sauce to enhance the flavors. Stir to combine, then remove the skillet from the heat.
