Easy Asian Cucumber Salad

Ingredients
  

2 large cucumbers, thinly sliced

1 red bell pepper, julienned

1 carrot, shredded

3 green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon ginger, grated

1 teaspoon garlic, minced

1 tablespoon sesame seeds

Salt and pepper to taste

Instructions
 

In a large bowl, combine the sliced cucumbers, julienned red bell pepper, shredded carrot, chopped green onions, and cilantro.

    In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, and minced garlic until well combined.

      Pour the dressing over the cucumber mixture and gently toss until the vegetables are evenly coated.

        Season with salt and pepper to taste, and sprinkle sesame seeds on top.
