Easy Asian Cucumber Salad

Ingredients
  

2 large English cucumbers, thinly sliced

1 teaspoon salt

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

1 garlic clove, minced

1 tablespoon sesame seeds, toasted

2 green onions, sliced

Crushed red pepper flakes (optional, to taste)

Instructions
 

In a colander, toss the thinly sliced cucumbers with salt and let them sit for 15-20 minutes to draw out excess moisture. Rinse gently and pat dry with a paper towel.

    In a large bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, and minced garlic until smooth.

      Add the prepared cucumbers to the bowl and toss to coat them evenly in the dressing.

        Fold in the toasted sesame seeds and sliced green onions. If you like a bit of heat, sprinkle in some crushed red pepper flakes as per your taste.

          Chill the salad in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
