1.5 lbs chicken pieces (preferably thighs or drumsticks)

1 can (14 oz) coconut milk

1 large onion, chopped

4 cloves garlic, minced

2 inches fresh ginger, grated

2-3 green chilies, chopped (adjust to taste)

1 tablespoon curry powder

1 teaspoon cumin

1 teaspoon turmeric

Salt, to taste

2 tablespoons sunflower oil (or any cooking oil)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Cooked rice or flatbread, for serving

Instructions
 

Marinate the Chicken: In a large bowl, mix the chicken pieces with lime juice, salt, curry powder, cumin, and turmeric. Let it marinate for at least 30 minutes or up to 2 hours in the refrigerator for deeper flavor.

    Prepare the Base Sauce: In a large pot or deep skillet, heat the sunflower oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Add Aromatics: Stir in the minced garlic, grated ginger, and green chilies. Cook for another 2-3 minutes until fragrant.

        Cook the Chicken: Add the marinated chicken to the pot, browning it on all sides for about 8-10 minutes.

          Simmer in Coconut Milk: Pour in the coconut milk, stirring to combine. Bring to a simmer, then reduce the heat to low. Cover and let it cook for 25-30 minutes or until the chicken is cooked through and tender, stirring occasionally. Adjust salt if needed.

            Final Touches: Once the chicken is well cooked, remove the lid and let the sauce thicken for an additional 5-10 minutes on low heat if desired.
