Dump-and-Bake Chicken Tzatziki with Rice

1.5 lbs boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 medium cucumber, diced

1 cup plain Greek yogurt

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 teaspoon dried dill

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley or mint for garnish

Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little olive oil.

    Mix the Base: In the baking dish, combine the rice, chicken broth, and a pinch of salt. Mix well to ensure the rice is evenly distributed.

      Add the Chicken: Place the chicken thighs on top of the rice mixture. Season both sides of the chicken with salt, pepper, dried dill, and dried oregano.

        Make the Tzatziki Sauce: In a small bowl, combine the Greek yogurt, minced garlic, diced cucumber, olive oil, lemon juice, salt, and a touch of pepper. Mix until well combined.
