4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon fresh basil, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup chicken broth

Toothpicks or kitchen twine

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, basil, parsley, paprika, salt, and pepper. Mix until well combined and set aside.

      Prepare Chicken: Place each chicken breast on a cutting board. Use a sharp knife to create a pocket in each breast by slicing horizontally, being careful not to cut all the way through.

        Stuff Chicken: Generously fill each chicken breast pocket with the cheese and herb mixture. Secure them closed with toothpicks or tie them with kitchen twine to keep the filling from spilling out.

          Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.

            Bake Chicken: Pour chicken broth into the skillet around the chicken breasts. This will keep them moist while baking. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).

              Rest and Serve: Remove the chicken from the oven and let it rest for about 5 minutes. Carefully remove toothpicks or twine, slice if desired, and serve warm.
