For the Chicken Cordon Bleu:

4 boneless, skinless chicken breasts

4 slices of ham (preferably smoked)

4 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko)

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

For the Creamy Swiss Cheese Sauce:

1 cup heavy cream

1 cup shredded Swiss cheese

2 tablespoons all-purpose flour

1 tablespoon Dijon mustard

1 tablespoon butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Place each chicken breast between two pieces of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet. Season both sides with salt, pepper, and paprika.

      Assemble the Cordon Bleu: On each chicken breast, layer one slice of ham and one slice of Swiss cheese. Roll the chicken tightly, starting from one end, and secure with toothpicks or kitchen twine.

        Coat the Chicken: Set up a breading station with three shallow dishes: one with flour, one with the beaten eggs, and one with breadcrumbs. Dredge the chicken rolls in flour, dip in the egg, then coat with breadcrumbs, pressing gently to adhere.

          Cook the Cordon Bleu: In a large oven-safe skillet, heat olive oil and butter over medium heat. Add the chicken rolls to the skillet and cook until golden brown on all sides, about 3-4 minutes per side.

            Finish Baking: Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and the juices run clear.

              Make the Creamy Swiss Cheese Sauce: While the chicken is baking, melt 1 tablespoon of butter in a saucepan over medium heat. Whisk in the flour and cook for about 1 minute. Gradually add the heavy cream, stirring constantly until thickened. Stir in the Dijon mustard and Swiss cheese until melted and smooth. Season with salt and pepper.

                Serve: Remove the chicken from the oven and let it rest for a few minutes. Remove the toothpicks or twine, slice the chicken rolls, and drizzle the creamy Swiss cheese sauce over them. Garnish with fresh parsley.
