Ingredients

1 lb (450g) ground chicken

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (green or red), diced

1 cup diced tomatoes (canned or fresh)

2 tablespoons Cajun seasoning

1 tablespoon Worcestershire sauce

1 tablespoon olive oil

2 tablespoons tomato paste

1 tablespoon brown sugar

1 teaspoon Dijon mustard

Salt and pepper to taste

4 hamburger buns

Fresh chopped parsley, for garnish

Instructions

Sauté Vegetables:

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes, until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook Chicken:

Add the ground chicken to the skillet. Break it apart with a spatula and cook until browned and fully cooked, about 7-8 minutes. Drain any excess fat if necessary.

          Add Seasonings:

Stir in the Cajun seasoning, Worcestershire sauce, tomato paste, and diced tomatoes. Add the brown sugar and Dijon mustard, then season with salt and pepper to taste. Mix well to combine all ingredients.

              Simmer:

Reduce the heat to low and let the mixture simmer for about 10 minutes, stirring occasionally. This allows the flavors to meld together.

                  Prepare Buns:

While the filling is simmering, toast the hamburger buns lightly until golden brown.

                      Serve:

Spoon the Cajun chicken mixture generously onto the bottom halves of the toasted buns. Top with fresh parsley if desired, and serve the top halves of the buns alongside.

                          Enjoy:

Dig in and savor the delicious, spicy Cajun flair of this unique take on the classic sloppy joe!
