2 salmon fillets (about 6 oz each)

1 cup jasmine rice

2 cups water or broth (chicken or vegetable)

1 tablespoon olive oil

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper, to taste

1 cup steamed broccoli florets

½ avocado, sliced

1 tablespoon sesame seeds

2 green onions, sliced

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and water or broth in a saucepan and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork.

    Make the Marinade: In a small bowl, whisk together the soy sauce, honey, sesame oil, garlic powder, ginger powder, salt, and pepper. Pour this marinade over the salmon fillets and let them marinate for at least 15 minutes.

      Cook the Salmon: In a skillet, heat the olive oil over medium-high heat. Remove the salmon from the marinade (reserve the marinade) and place the fillets skin-side down in the hot skillet. Cook for about 4-5 minutes until the skin is crispy. Carefully flip the salmon and cook for another 3-4 minutes, pouring in the reserved marinade during the last minute to glaze the salmon.
