Crispy Hot Honey Feta Chicken

4 boneless, skinless chicken breasts

1 cup feta cheese, crumbled

1/2 cup all-purpose flour

2 large eggs

1 cup panko bread crumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1/4 cup hot honey (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Olive oil (for frying)

Homemade hot honey: Mix 1/4 cup honey with 1-2 tablespoons of hot sauce or red pepper flakes.

Instructions
 

Prepare the Chicken: Start by flattening each chicken breast to an even thickness by placing them between two sheets of plastic wrap and gently pounding with a meat mallet or rolling pin until about 1/2 inch thick. This helps them cook evenly.

    Season the Chicken: Season both sides of the chicken breasts with salt, pepper, garlic powder, smoked paprika, and dried oregano.

      Set Up Dredging Station: In one shallow bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine the panko bread crumbs with half of the crumbled feta cheese.

        Coat the Chicken: Dip each seasoned chicken breast first in the flour, shaking off any excess. Then, dip it into the beaten eggs, allowing the excess to drip off. Finally, press the chicken into the panko feta mix, ensuring a well-coated, crispy exterior.

          Fry the Chicken: In a large skillet, heat enough olive oil over medium-high heat to cover the bottom of the pan (about 1/4 inch deep). When the oil is hot, carefully add the breaded chicken breasts. Fry for 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/75°C).
