Ingredients

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp garlic powder

1 large egg, beaten

1/4 cup vegetable oil (for frying)

For the Honey Garlic Sauce:

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tsp ginger, grated

1 tbsp rice vinegar

1/2 tsp sesame oil

1 tsp cornstarch (to thicken)

1 tbsp water (to dissolve cornstarch)

Instructions

Prepare the Chicken: In a bowl, combine the all-purpose flour, cornstarch, baking powder, salt, pepper, and garlic powder. In another bowl, beat the egg. Dip the chicken pieces first in the beaten egg, then coat them thoroughly in the flour mixture. Set aside.

Make the Sauce: In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. Stir well and bring to a gentle simmer. In a separate small bowl, mix 1 tsp of cornstarch with 1 tbsp of water to create a slurry, then add this to the sauce. Stir until the sauce thickens (about 2-3 minutes). Remove from heat.

Fry the Chicken: In a large pan, heat vegetable oil over medium-high heat. Once hot, add the coated chicken pieces in batches. Fry until they turn golden brown and crispy, about 5-6 minutes per batch. Make sure not to overcrowd the pan.

Drain and Coat: Once the chicken is cooked, use a slotted spoon to transfer it to a paper towel-lined plate to drain excess oil. Immediately toss the hot chicken in the honey garlic sauce until evenly coated.

Serve: Transfer the crispy honey garlic chicken to a serving platter. Garnish with chopped green onions and sesame seeds if desired. Enjoy with steamed jasmine rice or noodles!
