Crispy Chilli Beef (with Sweet Chilli) - Chinese Shredded Beef

400g beef flank or sirloin, thinly sliced

1 tablespoon cornstarch

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup vegetable oil (for frying)

3 cloves garlic, minced

1 thumb-sized ginger, minced

2 red chillies, sliced (adjust for spice preference)

1 bell pepper (red or green), sliced

1 medium onion, sliced

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon chopped fresh coriander (for garnish)

Cooked jasmine rice or noodles (for serving)

Instructions
 

Prepare the Beef: In a medium bowl, combine the sliced beef with cornstarch, baking soda, salt, and black pepper. Mix well to coat the beef evenly. Allow it to marinate for at least 30 minutes to tenderize and enhance flavor.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Fry the Beef: Add the marinated beef in batches to avoid overcrowding. Fry each batch for about 3-4 minutes until crispy and browned. Remove and drain on paper towels to remove excess oil.

        Sauté Vegetables: In the same skillet, add a little more oil if necessary. Sauté the minced garlic and ginger until fragrant, about 30 seconds. Then, add the sliced chillies, bell pepper, and onion. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

          Combine Sauces: In a small bowl, mix sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Add this sauce to the sautéed vegetables and stir to combine.

            Toss in Beef: Add the crispy beef back into the skillet, tossing everything together gently to coat the beef in the sauce. Cook for another 2 minutes until heated through.
