Crispy Bang Bang Salmon Bites (Sweet & Spicy)

1 pound fresh salmon fillet, skin removed

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon honey (optional)

1 tablespoon finely chopped green onions (for garnish)

1 teaspoon sesame seeds (optional)

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, approximately 1-inch pieces. This allows for even cooking and crispy texture.

    Set Up Breading Station: In three separate bowls, set up the breading station. One bowl should contain all-purpose flour mixed with salt, pepper, garlic powder, and smoked paprika. The second bowl should have the beaten eggs. The third bowl should have panko breadcrumbs.

      Bread the Salmon Bites: First, take a piece of salmon and coat it in the flour mixture, tapping off any excess. Then, dip it in the beaten egg, allowing any excess egg to drip off. Finally, roll it in panko breadcrumbs until fully coated. Repeat this process for all the salmon pieces.

        Fry the Salmon Bites: In a large skillet, heat vegetable oil over medium-high heat (about 350°F or 180°C). Carefully add the salmon bites in batches, making sure not to overcrowd the pan. Fry them until golden brown and crispy, approximately 2-3 minutes per side. Once done, transfer the salmon bites to a paper towel-lined plate to drain excess oil.

          Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, Sriracha, and honey (if using). Adjust the heat level by adding more Sriracha based on your preference.
