1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust for spice level)

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (or to taste)

1 tsp lime juice

Fresh green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Marinate the Chicken: In a bowl, combine the chicken pieces with buttermilk. Season lightly with salt and pepper. Allow it to marinate for at least 30 minutes (or up to 4 hours in the refrigerator for extra flavor).

    Prepare the Dry Mix: In a separate bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

      Heat the Oil: In a large skillet or deep-fryer, heat enough oil to cover the chicken pieces (about 2 inches deep) to 350°F (175°C).

        Coat the Chicken: Remove chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the dry mix, pressing firmly to ensure an even coating.

          Fry the Chicken: Carefully place coated chicken pieces into the hot oil in batches (do not overcrowd). Fry until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove them and drain on a paper towel-lined plate.
