Ingredients

8 oz penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, sliced into strips

Salt and pepper, to taste

8 oz cremini mushrooms, sliced

1 cup asparagus, cut into 1-inch pieces

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions

Cook the Penne: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add to the skillet and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Cook Vegetables: In the same skillet, add the sliced mushrooms and asparagus. Sauté for about 4-5 minutes until the mushrooms are browned and the asparagus is tender. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Make the Sauce: Lower the heat to medium and pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and Italian seasoning. Let the sauce simmer for about 3-4 minutes, allowing it to thicken slightly.

Combine Everything: Return the cooked chicken to the skillet, and then add the cooked penne pasta. Toss everything together until well coated with the creamy sauce. Cook for an additional 2-3 minutes to heat through.

Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
