Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Fresh parsley, chopped for garnish

Instructions

Cook the Fettuccine: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

Sauté the Shrimp: In a large skillet over medium heat, add the olive oil and 1 tablespoon of butter. Once melted and hot, add the shrimp in a single layer. Cook for 2-3 minutes on each side until they are pink and opaque. Remove the shrimp and set aside.

Make the Garlic Sauce: In the same skillet, add the remaining tablespoon of butter and the minced garlic. Sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

Add Cream and Cheese: Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, red pepper flakes (if using), and season with salt and black pepper. Cook until the sauce thickens slightly, about 3-5 minutes.

Combine Pasta & Shrimp: Add the cooked fettuccine and shrimp to the sauce, tossing until everything is well coated. If the sauce is too thick, add some reserved pasta water a little at a time until you reach your desired creaminess.

Serve: Divide the creamy garlic shrimp pasta among plates or bowls. Garnish with fresh parsley and additional Parmesan if desired. Enjoy!
