Ingredients
  

1 pound chicken sausage, sliced

1 cup orzo pasta

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 cups fresh spinach, chopped

2 cups chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until softened.

      Stir in the orzo pasta, allowing it to toast lightly for 1-2 minutes.

        Gradually pour in the chicken broth and bring to a simmer. Add the Italian seasoning, and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.

          Lower the heat and stir in the heavy cream, followed by the cooked chicken sausage and chopped spinach. Cook for another 3-4 minutes until the spinach has wilted and everything is warmed through.

            Remove from heat and stir in the grated Parmesan cheese, mixing until creamy and well combined.

              Serve hot, garnished with fresh parsley.
