Ingredients

1 lb chicken sausage, sliced (your favorite flavor)

1 cup orzo pasta

1 medium onion, diced

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup spinach, chopped

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil, for garnish (optional)

Instructions

In a large skillet or pan, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

In the same pan, add the diced onion and sauté until translucent, approximately 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Stir in the orzo pasta and cook for 2 minutes, allowing it to toast slightly.

Pour in the chicken broth and bring to a boil. Reduce the heat to a simmer, cover, and cook for about 10 minutes or until the orzo is tender and most of the liquid is absorbed.

Stir in the heavy cream, spinach, cherry tomatoes, and Italian seasoning. Add the cooked sausage back to the pan and stir to combine. Season with salt and pepper to taste.

Allow the mixture to simmer for another 3-5 minutes until everything is heated through and the spinach is wilted.

Remove from heat and stir in the grated Parmesan cheese until melted and creamy.

Garnish with fresh basil if desired and serve immediately.
