Cinnamon Sugar French Toast Muffins

6 slices of stale bread (white, brioche or challah work best)

3 large eggs

1 cup whole milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar

2 tablespoons granulated sugar (for topping)

1 tablespoon ground cinnamon (for topping)

Maple syrup (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or butter.

    Prepare the Bread: Cut the stale bread into small cubes (approximately 1-inch). Place the bread cubes in a large mixing bowl and set aside.

      Make the Custard Mixture: In a separate bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg (if using), and salt until well combined.

        Combine: Pour the custard mixture over the bread cubes, ensuring every piece of bread is coated. Gently fold the mixture until well combined, then allow it to sit for about 10 minutes so the bread can soak up the liquid.

          Prepare the Muffin Tin: In a small mixing bowl, combine melted butter with brown sugar, 2 tablespoons of granulated sugar, and 1 tablespoon of ground cinnamon. Mix until smooth. Spoon a small amount of the butter mixture into the bottom of each muffin cup.

            Fill Muffin Tins: Spoon the soaked bread mixture evenly into the prepared muffin tins, filling each cup to about 2/3 full.

              Finishing Touch: drizzle any remaining custard over the filled muffin cups if you have any left.

                Bake: Bake in the preheated oven for 18-20 minutes or until the muffins are golden brown and set in the center.

                  Cool & Serve: Allow muffins to cool in the tin for about 5 minutes before gently removing them. Enjoy warm drizzled with maple syrup and sprinkle with extra cinnamon sugar if desired.
