500g flank steak, thinly sliced against the grain

2 cups broccoli florets

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

½ cup beef broth or water

Cooked jasmine rice, for serving

Sesame seeds and chopped green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, cornstarch, and a dash of black pepper. Mix well and set aside for 20 minutes to marinate.

    Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to ice water to halt the cooking process. Drain again and set aside.

      Prepare the Stir-Fry Sauce: In a small bowl, whisk together the oyster sauce, rice vinegar, sugar, and beef broth (or water) until well combined. Set aside.

        Cook the Beef: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the marinated beef in a single layer and sear until browned on both sides, about 2-3 minutes. Remove the beef from the pan and set aside.

          Stir-Fry the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring quickly until fragrant (about 30 seconds). Then, add the blanched broccoli and stir-fry for 1-2 minutes.

            Combine Everything: Return the beef to the pan with the broccoli, pour in the prepared sauce, and stir well to combine. Cook for another 2-3 minutes until everything is heated through and the sauce thickens slightly. Drizzle with sesame oil before removing from heat.

              Serve: Serve the beef and broccoli hot over a bed of fluffy jasmine rice. Garnish with sesame seeds and chopped green onions.
