Chinese Beef and Broccoli

1 lb (450g) beef flank steak, thinly sliced against the grain

4 cups broccoli florets

1 cup sliced bell peppers (red or green)

3 cloves garlic, minced

1 inch piece of ginger, grated

1/4 cup soy sauce (preferably low-sodium)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 tablespoons vegetable oil (for stir-frying)

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Marinate the Beef: In a large bowl, combine the sliced beef with soy sauce, oyster sauce, rice vinegar, sugar, and cornstarch. Toss well to ensure the beef is fully coated. Let marinate for at least 20 minutes.

    Blanch the Broccoli: While the beef is marinating, bring a pot of water to a boil. Add the broccoli florets and blanch for about 2 minutes until bright green and just tender. Remove and immediately plunge into an ice bath to stop the cooking. Drain and set aside.

      Stir-fry the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer and stir-fry for about 3-4 minutes until it's browned and almost cooked through. Remove the beef from the skillet and set aside.

        Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic, ginger, and sliced bell peppers. Stir-fry for about 1-2 minutes until fragrant and the peppers are slightly tender.

          Combine Ingredients: Return the beef to the skillet along with the blanched broccoli. Add sesame oil, salt, and pepper to taste. Stir everything together over medium-high heat for another 2-3 minutes, ensuring all ingredients are heated through and well combined.

            Serve: Serve hot over a bed of cooked jasmine rice or noodles, garnishing with sesame seeds or sliced green onions if desired.
