1 lb (450g) elbow macaroni

1 lb (450g) ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (28 oz) crushed tomatoes

2 cups beef broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

2 cups shredded cheese (cheddar or a Mexican blend)

1/4 cup chopped fresh cilantro (for garnish)

Optional: sour cream and sliced jalapeños for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In the same large pot (or a separate skillet), heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant (about 3-4 minutes). Add the ground beef (or turkey) and cook until browned. Drain any excess fat.

      Combine Ingredients: Stir in the kidney beans, black beans, crushed tomatoes, beef broth, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Bring the mixture to a simmer over medium-high heat.

        Mix in Pasta: Once the chili is bubbling, add the cooked macaroni to the pot. Stir until the pasta is well-coated and heated through.

          Cheesy Goodness: Reduce the heat to low and mix in 1 1/2 cups of shredded cheese, stirring until melted and creamy.
