2 boneless, skinless chicken breasts

1 ripe avocado, mashed

1 cup shredded cheddar cheese

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon paprika

Salt and black pepper, to taste

4 slices of whole grain or sourdough bread

1 cup fresh spinach leaves

2 tablespoons olive oil or butter for toasting

Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and paprika. Grill or pan-sear the chicken over medium heat for about 6-7 minutes on each side or until fully cooked. Once done, let it rest for a few minutes before slicing it into thin strips.

    Prepare the Sauce: In a small bowl, mix together the mayonnaise, Dijon mustard, and lime juice until well combined. Set aside.

      Assemble the Sandwich:

        - Take two slices of bread and spread a generous amount of the mayonnaise mixture on one side of each slice.
