The history of lasagna is as rich and layered as the dish itself. Traditionally, lasagna is believed to have originated in ancient Greece, where layers of pasta were combined with meat and sauce, much like its modern-day counterpart. However, it was in Italy that the dish truly flourished, evolving into the beloved comfort food we know today. The city of Bologna is particularly famous for its version, featuring rich ragù (meat sauce) and bechamel sauce, layered between sheets of handmade pasta.

Ingredients

9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

2 cups Alfredo sauce (store-bought or homemade)

1 tablespoon fresh parsley, chopped (for garnish)

1 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper, to taste

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to the package instructions until al dente. Drain and rinse with cold water to prevent sticking.

Prepare the Filling: In a mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

Assemble the Rolls: On a clean surface, lay out a lasagna noodle. Spread a few tablespoons of the chicken filling along the length of the noodle, leaving some space at the edges. Carefully roll the noodle away from you, ensuring the filling stays inside. Repeat this process with the remaining noodles and filling.

Prepare the Baking Dish: Spread 1 cup of Alfredo sauce on the bottom of a 9x13 inch baking dish. Place the lasagna rolls seam-side down in the dish.

Add Sauce and Cheese: Pour the remaining Alfredo sauce over the top of the lasagna rolls and sprinkle with additional mozzarella cheese.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven, let it cool for a few minutes, and sprinkle with chopped parsley before serving.
