Cheesy Masala Beans on Toast

1 can (15 oz) kidney beans, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger paste

1 green chili, finely chopped (optional for heat)

1 teaspoon cumin seeds

1 teaspoon garam masala

1 teaspoon smoked paprika

Salt and black pepper to taste

1 cup shredded sharp cheddar cheese

1/4 cup fresh cilantro, chopped (for garnish)

4 slices of thick-cut bread (sourdough or whole grain recommended)

Butter for toasting the bread

1 tablespoon lemon juice

Instructions
 

Prepare the Bean Mixture: In a medium saucepan, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant.

    Sauté Vegetables: Add the finely chopped onion to the pan and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, ginger paste, and green chili (if using) and cook for another minute until aromatic.

      Add Beans and Spices: Add the drained kidney beans to the pot, followed by the garam masala, smoked paprika, salt, and black pepper. Stir well to coat the beans in the spice mixture. Cook for 5 minutes, allowing the beans to warm through and absorb the flavors.

        Mash Slightly: Using a fork or a potato masher, mash some of the beans in the pot to create a creamy consistency while leaving others whole for texture. Stir in the lemon juice and half of the shredded cheese, mixing until melted and incorporated.

          Toast the Bread: While the beans are cooking, heat a skillet or grill pan over medium heat. Spread butter on one side of each slice of bread. Toast the bread in batches until golden brown and crispy on one side. Flip and toast the other side for a couple of minutes until crisp.

            Assemble the Toast: Spoon the cheesy masala beans generously over the toasted side of each slice of bread. Sprinkle the remaining shredded cheese on top.

              Final Broil (Optional): For extra cheesiness, place the assembled toast on a baking sheet and broil in the oven for 2-3 minutes until the cheese is bubbly and golden.
