Cheesy Beef Enchilada Tortellini

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) enchilada sauce (red or green)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

12 oz cheese tortellini (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

¼ cup chopped fresh cilantro (for garnish)

Sliced jalapeños (optional, for garnish)

Sour cream (optional, for serving)

Instructions
 

Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

    Add Vegetables: Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.

      Season the Mixture: Stir in the enchilada sauce, black beans, corn, cumin, smoked paprika, salt, and pepper. Let this mixture simmer for 5 minutes to combine flavors.

        Cook the Tortellini: In a separate pot, cook the cheese tortellini according to the package instructions. Drain and set aside.

          Combine Tortellini and Sauce: Add the cooked tortellini to the beef and enchilada mixture. Stir gently until combined.

            Add Cheese: Sprinkle half of the shredded cheddar and Monterey Jack cheeses over the tortellini mixture. Stir to incorporate the cheese until melted.

              Transfer and Top: Transfer the mixture to a greased 9x13 inch baking dish. Top with the remaining cheese.

                Bake: Preheat your oven to 375°F (190°C). Bake for 20-25 minutes until bubbly and the cheese is golden.
