Ingredients

1 lb ground beef

1 cup shredded cheddar cheese

1 cup shredded Mexican blend cheese

1 can (15 oz) refried beans

1 cup salsa

1 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

8 large flour tortillas

2 cups frozen French fries (or homemade, if preferred)

1/4 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions

Prepare the Fries: Preheat your oven according to the frozen French fries packaging instructions. Spread the fries on a baking sheet in a single layer and bake until golden and crispy, about 20-25 minutes, flipping halfway through for even cooking.

Cook the Beef: In a large skillet over medium heat, add the ground beef, breaking it apart with a spatula. Season with salt, pepper, cumin, chili powder, garlic powder, and onion powder. Cook until browned and fully cooked through, about 5-7 minutes. Drain excess fat if necessary.

Combine Ingredients: Stir in the refried beans and salsa into the cooked beef mixture. Cook for an additional 2-3 minutes until everything is heated through and well combined.

Assemble the Burritos: Lay out a tortilla on a flat surface. Place a generous scoop of the beef and bean mixture in the center, then sprinkle with a mix of the shredded cheddar and Mexican blend cheeses. Fold in the sides of the tortilla, then roll it tightly from the bottom up to encase the filling. Repeat with remaining tortillas.

Heat and Crisp the Burritos: In the same skillet, lightly oil it and place the burritos seam-side down. Cook on medium heat for about 2-3 minutes until golden brown, then flip and cook for an additional 2-3 minutes on the other side. This helps to crisp up the burritos.

Serve: Remove the burritos from the skillet and let them rest for a minute before slicing in half. Serve hot alongside crispy fries, a dollop of sour cream, and garnish with fresh cilantro.
