Ingredients

6 cups frozen diced potatoes

8 strips of bacon, cooked and crumbled

2 cups shredded cheddar cheese

1 cup milk

4 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup chopped green onions (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.

Prepare the Base: In a sizeable mixing bowl, combine the frozen diced potatoes and crumbled bacon. Mix well to ensure the bacon is evenly distributed.

Make the Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, and a pinch of salt and pepper until well combined.

Layer Ingredients: In the greased baking dish, layer half of the potato and bacon mixture evenly on the bottom. Sprinkle one cup of shredded cheddar cheese over this layer. Repeat with the remaining potato mixture and top with the remaining cheese.

Add Egg Mixture: Gently pour the egg mixture over the layered potatoes and bacon, ensuring that it seeps through all the layers.

Bake: Cover the dish with aluminum foil and bake for 35 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and the casserole is set.

Cool and Serve: Allow the casserole to cool for 5-10 minutes before slicing. Garnish with chopped green onions if desired. Serve warm and enjoy!
