2 large carrots, grated

1 large apple (Honeycrisp or Granny Smith), chopped

1/4 cup raisins or craisins

1/4 cup walnuts, chopped

2 tablespoons fresh lemon juice

2 tablespoons honey or maple syrup

2 tablespoons plain yogurt or vegan yogurt (optional)

Pinch of cinnamon

Fresh mint leaves for garnish

Instructions
 

In a large mixing bowl, combine the grated carrots and chopped apple.
