4 cups fresh broccoli florets

1 medium onion, diced

2 cloves garlic, minced

3 cups vegetable or chicken broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

1 cup milk (whole or 2%)

2 tablespoons olive oil

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

¼ teaspoon nutmeg (optional)

2 tablespoons all-purpose flour (optional, for thickening)

Croutons or additional cheese for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent. Add the minced garlic and cook for an additional minute, until fragrant.

    Add Broccoli: Stir in the broccoli florets and pour in the vegetable or chicken broth. Bring to a simmer and cover the pot. Cook for about 10-12 minutes, or until the broccoli is tender.

      Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.

        Stir in Cream and Cheese: Lower the heat and add the heavy cream, milk, shredded cheddar cheese, salt, black pepper, and nutmeg (if using). Stir constantly until the cheese is melted and the soup is heated through. If you prefer a thicker consistency, you can sprinkle in flour and stir well.
