8 oz spaghetti

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

4 oz pancetta or bacon, diced

3 large eggs

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 cup heavy cream

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.

    Cook the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

      Cook the Pancetta/Bacon: In the same skillet, add the diced pancetta or bacon. Cook until crispy, about 3-4 minutes. Add the minced garlic and cook for an additional minute, until fragrant.

        Prepare Sauce Mixture: In a bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream until well combined.
