Ingredients

For the Dumplings:

1 cup all-purpose flour

1/2 cup water (more if needed)

1/2 teaspoon salt

1 tablespoon olive oil

For the Filling:

1 cup ground chicken or vegetable protein

1/4 cup finely chopped green onions

1/4 cup grated carrots

2 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon soy sauce

1 teaspoon curry powder

Salt and pepper to taste

For the Soup:

4 cups vegetable or chicken broth

1 can (14 oz) coconut milk

2 tablespoons curry powder

1 tablespoon fish sauce (optional)

1 tablespoon lime juice

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Make the Dumpling Dough: In a bowl, combine the all-purpose flour and salt. Gradually add water while mixing, knead until smooth and elastic. Cover with a damp cloth and set aside for 30 minutes.

Prepare the Filling: In a medium bowl, mix the ground chicken (or vegetable protein), green onions, carrots, garlic, ginger, soy sauce, curry powder, salt, and pepper. Ensure all ingredients are well combined.

Form the Dumplings: Divide the dough into small balls (about the size of a golf ball). Roll each ball thinly into circles (3-4 inches in diameter). Place a small spoonful of the filling in the center of each circle. Fold the dough over the filling, pinching the edges to seal tightly. Repeat until all dough and filling are used.

Make the Soup: In a large pot, heat a splash of oil over medium heat. Add the vegetable or chicken broth and bring to a simmer. Stir in the coconut milk, curry powder, fish sauce (if using), and lime juice. Let it simmer for about 10 minutes to enhance the flavors.

Cook the Dumplings: Carefully add the dumplings to the simmering soup, one at a time, ensuring they don't stick together. Cook for about 5-7 minutes, or until the dumplings float to the top and are cooked through.

Serve: Ladle the soup and dumplings into bowls. Garnish with fresh cilantro and serve with lime wedges on the side for an extra zest.
