Bang Bang Chicken Skewers

Ingredients
  

1 lb (450g) boneless chicken thighs, cut into 1-inch pieces

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

8 wooden skewers (soaked in water for 30 minutes)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 teaspoons sriracha or to taste

1 tablespoon lemon juice

1 teaspoon honey (optional)

1 green onion, chopped (for garnish)

Instructions
 

Prepare Chicken: In a bowl, combine the chicken pieces with olive oil, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well to ensure the chicken is evenly coated.

    Marinate: Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Make Bang Bang Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lemon juice, and honey (if using). Adjust the heat level by adding more sriracha to taste. Set aside.

        Assemble Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking.

          Grill Skewers: Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Serve: Remove the skewers from the grill and let them rest for a minute. Serve hot with the Bang Bang sauce drizzled over or on the side for dipping. Garnish with chopped green onions.
