2 cups cooked jasmine rice

1 lb (450g) boneless, skinless chicken thighs

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 cup corn starch

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon garlic powder

1 teaspoon lime juice

Toppings:

1/2 cup shredded carrots

1 avocado, sliced

1/4 cup chopped green onions

1 teaspoon sesame seeds

Fresh cilantro, for garnish

Prepare the Chicken: In a bowl, season the chicken thighs with salt and pepper. Set up a breading station: place flour in one dish, beaten eggs in another, and panko breadcrumbs mixed with corn starch in a third dish.

    Bread the Chicken: Dredge each chicken thigh in flour, shaking off excess. Dip into the beaten eggs, then coat thoroughly with the panko-cornstarch mixture. Press gently to ensure the coating sticks well.

      Fry the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded chicken thighs. Cook for 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.

        Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, garlic powder, and lime juice. Mix well and taste; adjust spice level as desired.
